Most versions of Chicken Alfredo contain whipping cream which contains about 50 calories per Tablespoon. We’ve replaced the whipping cream with low fat mozzarella to create a delicious diet friendly Chicken Alfredo recipe.
Ingredients for this low calorie, low fat recipe are:
2 cups of cooked fettuccine
6 ounces of white chicken meat, cubed (equals meat from 1 medium-sized boned chicken breast – about 300 calories)
1/2 cup of diced onions
Butter Flavored Cooking Spray
Salt, Pepper
4 ounces of finely graded mozzarella cheese
2 cups of skimmed milk
1/2 cup of Parmesan Cheese
Cook chicken in non-stick pan using cooking spray. When near doneness is reached, add onions, salt and pepper.
Prepare sauce in microwavable pan: Melt cheeses, milk, pepper until smooth. Add chicken. Pour over fettuccine.
Serves 6
Total Calories for entire recipe: 1,200 Per Serving: 200
Serving Suggestion: Serve with side salad with light dressing.
